This is seriously one of my favorite combo of flavors! As fresh strawberries become available for summer this is a must have.
Strawberry Spinach Salad
- 2 cups spinach
- 5-6 strawberries sliced
- 1/2 cup quinoa cooked
- 1/4 avocado diced
- 1/8 cup chopped walnuts
- balsalmic dressing of choice
Combine all ingredients in a bowl & toss. This serves 1. Full of greens, antioxidants, protein & healthy fats.
Tip: You can make double or triple to store in your fridge & eat throughout the week. For those that are busy, this is a great time saver 😉
