5-Ingredient Detox Salad

This amazing salad is a go to of mine for so many reasons. Kale use to not be a favorite of mine. Believe it or not I do not automatically like something cause it is healthy. However, when I learned that massaging kale helps to soften it & take out some of that bitterness I became hooked.  Go ahead & give it a go:)

Ingredients:

  • 4 large handfuls of chopped kale (I buy pre-chopped to save time)
  • 1/2 cup cooked quinoa (you can also buy pre-cooked for time)
  • 1 lemon
  • 1 Tablespoon Extra Virgin Olive Oil
  • 1/4 – 1/2 avocado
  • salt to taste

Put the kale in a bowl. Squeeze the juice out of the lemon & drizzle on the olive oil. Massage the kale with your hands for 1-2 minutes. Literally squeeze it & toss it around. You will notice the kale soften & slightly shrink in size. Toss in the quinoa & top with avocado. Told you it was easy 😉
